Spinach Dip

Recipe Details:

Ingredients
2 cups grated Jack cheese (8oz)
1 tbsp jalapenos, seeded and minced (or you can use the finely chopped canned kind)
1 cup white onions, chopped
2 tomatoes, seeded and chopped
1 10-oz package frozen chopped spinach, thawed and squeezed very dry
8 oz. cream cheese, softened
1/3 cup half and half

Directions
Preheat oven to 400. Mix all ingredients in a large bowl. Spray a baking dish (9in. x 11in.) with Pam and spread dip evenly into dish. Bake uncovered for 25-30 minutes. Halfway through the cooking time, take it out and give it a good stir. Serve with tortilla chips.

Note: This recipe can easily be doubled and is the best. To quickly defrost frozen spinach, place in colander and run under cold water. Make sure to really squeeze the spinach dry so dip isn't watery. It's perfect for bbq's and superbowl parties!
