Breadcrumb Coated Baked Goat Cheese

Recipe Details:

- 4 rounds of fresh goat cheese, each about 2 1/2 inches in diameter and about 1/2 inch thick
- a bit of Extra Virgin Olive Oil
- 1 tsp dried herbs de provence
- 1 cup fine, fresh bread crumbs (not toasted)
- Salt and fresh pepper

Preheat oven to 400 degrees.

Mix breadcrumbs with herbs de provence, salt and pepper.

Coat cheese rounds lightly with olive oil, then with the breadcrumb mixture. Put them in an oiled baking dish, drizzle lightly with oil and place in the oven. Bake 6-10 minutes or until cheese is lightly bubbling and golden.

Serve on top of an arugula salad.
