Trail Rider Breakfast Casserole

Recipe Details:

Trail Rider Breakfast Casserole

10 slices of bread, white or wheat
1/2 lb. cheddar cheese, grated
2/3 tsp salt
1/2 lb bacon or ham or sausage (cooked)
8 eggs beaten
2 cups of milk (whole)
Pepper to taste

Cut bread into 1 inch squares (if desired, remove crust). Cut meat into small pieces or crumble sausage. Grease a 9X13 pyrex dish. Layer the bread, meat and cheese and repeat again. Combine the eggs, milk, salt and pepper and pour over the bread, meat and cheese layers. Cover the dish and refrigerate overnight. The next morning bake at 325 degrees for about 45 mins until firm.

Makes 6-10 servings. Note...you may add a 1/4 cup of the following: onions, mushrooms, tomatoes, bell peppers, jalapenos, or black olives. It is also great to serve salsa or tabasco on the side.
