Tuscan Bean Bruschetta

Recipe Details:

1 16oz jar large Italian white beans (can be found at an Italian deli or specialty shop), drained and rinsed
2 tbsp extra virgin olive oil
1 Roma Tomato, cored, seeded and chopped
1 tbsp fresh mixed herbs (such as thyme, oregano and rosemary)
Sea salt and fresh pepper
1 large garlic clove
1 Baguette, sliced

Preheat oven to 375.

Heat 1 tbsp olive oil over medium heat in a medium pan. Add tomatoes and cook about 3 minutes. Add herbs, beans, salt and pepper and cook a couple minutes more to heat the beans through. Remove from heat. Season with sea salt and pepper.

Brush remaining olive oil on each bread slice. Season with salt and pepper. Toast for 8-10 minutes. Remove from oven and rub one side of each slice with the garlic clove.

Heap beans on each toast and serve.
