Green Rice

Recipe Details:
1 cup uncooked rice
1 cup sour cream
1/4 canola oil
2 cloves of garlic crushed
3/4 cup chopped, flat leaf parsley
1/2 cup chopped onion
1 can chopped green chilis, drained
1/2t chili powder
1t cumin
1 jalapeno pepper, seeded and chopped (optional)
2 cups grated, sharp Cheddar Cheese
1 cup grated Monterey Jack cheese
Preheat oven to 275 degrees. Cook rice according to package directions. Add remaining ingredients, reserving a little Monteray Jack cheese for the top. Pour into casserole and bake uncovered for 45 mins or until hot.
