Bananas Foster

Recipe Details:

Ingredients
4 firm yet ripe bananas (one per person)
1 tbsp butter
1 cup brown sugar
1/4 tsp cinnamon
1/2 cup dark rum
1 tbsp brandy
vanilla ice cream

Directions
Preheat the broiler.

For each banana, peel and cut lengthwise in half. Cut in half again crosswise. Spread brown sugar on a plate. Completely cover each banana piece in the brown sugar.

Melt butter in a cast iron skillet or oven proof pan, and arrange bananas in a single layer, cut sides facing up. Sprinkle evenly with cinnamon and broil for 3-5 minutes, or until noticeably caramelizing and browned.

Remove from the oven and add rum and brandy to the skillet. With a long wooden match, ignite the spirits. There will be flames until the alcohol is burned off, about 30-50 seconds.

For each serving, scoop ice cream in a bowl. Place banana slices on top and pour juice over and serve. Serves 4.

Note: Watching your dessert on fire is like a fireworks show for your guests! Practice ahead of time, so that you don't panic!
