Easy Chicken Noodle Soup

2 Quarts low-sodium chicken broth (Make sure this is good quality chicken broth. I like Swanson or Trader Joe's)
1 lb skinless chicken breasts, cut each breast in half (I buy scaloppini chicken as it is pounded and therefore cooks faster and is easier to cut into bite sized pieces)
½ cup chopped onion
2 carrots, peeled, sliced
2 celery stalks, sliced
2 tablespoons butter
1 tablespoon fresh lemon juice
½ cup finely chopped fresh parsley
4 oz elbow macaroni
2 teaspoons salt
1/2 teaspoon fresh-ground black pepper

1. In a large pot, melt butter over moderate heat. Add the onion, carrot, celery, and 1 teaspoon of the salt and cook, stirring occasionally, until the vegetables start to soften, about 10 minutes.

2. In another pot, cook the macaroni al dente, apprx 10-12 minutes, and strain.

3. Add the chicken, broth and remaining 1 teaspoon salt to the vegetable mixture. Cover and bring to a boil.

4. Reduce the heat and simmer, partially covered, until the chicken is just done, about 10-12 minutes (8 minutes for pounded chicken). Remove chicken pieces with tongs and set aside.

5. Stir in pepper, parsley and lemon juice. Cut chicken into bite sized pieces and add back into broth.

6. Combine chicken soup and macaroni noodles in soup bowls and serve.

This recipe serves 6. I usually double the recipe and freeze half for later.
