Smoked Salmon Squares

Recipe Details:

Ingredients
1 English cucumber, peeled
6 tbsp sour cream
1 1/2 tbsp drained bottled horseradish
Salt/Pepper
2 tbsp dill, chopped
1/4 lb sliced smoked salmon, pulled apart into small pieces
A bag of rye mini-toast crackers from Trader Joes (or squares of toasted rye bread)

Directions
Halve cucumber crosswise and using a vegetable peeler, peel thin ribbons of cucumber lengthwise. Discard core. Set aside.
In a small serving bowl, mix together sour cream, horseradish, and salt and pepper to taste. Set aside.
On a serving platter, arrange piles of cucumber, dill, smoked salmon and rye crackers. Place bowl of sour cream mixture in center.
For each do-it-yourself appetizer, layer a rye toast with a piece of salmon, then a dollop of sour cream, then cucumber and then a sprinkling of dill.

Serves 4

Notes: A great, beautiful do-it-yourself appetizer for lovers of smoked salmon! I buy the smoked salmon at Trader Joes or a huge packet from Costco (so I can do bagels and lox the next morning!)!
