Thanksgiving Leftovers Hash Patties

These great fried breakfast hash patties are inspired by the classic British let-nothing-go-to-waste specialty called "Bubble and Squeak" (referring to the sound of the ingredients frying in the pan).

You can and should use anything you have leftover from Thanksgiving or any other big meal, as long as there are cold mashed potatoes involved.

Ingredients:
Mashed potatoes, chilled
Butter or olive oil
Salt and pepper
Chopped Italian parsley (Optional)
Plus any of the following:
Traditional bread stuffing, crumbled, chilled AND/OR
Cooked cabbage or Brussels sprouts, chopped, chilled AND/OR
Roasted turkey, chopped AND/OR
Baked ham, chopped

Directions:
Combine in a medium bowl an equal amount mashed potatoes and the same amount of all the other ingredients you have on hand, plus salt and pepper to taste. With your hands, make sure the mixture is thoroughly combined and then form into 3-inch patties.

Heat a non-stick skillet over medium-high heat with 2-3 tbsp of butter or olive oil. Fry the patties, turning carefully only once, until golden brown on both sides.

Sprinkle with parsley (optional) and serve hot with ketchup and Tabasco sauce on the side.
