Chicken Portuguese

Recipe Details:

2 whole chicken breasts, halved
dash olive oil
salt and pepper
2 onions
3/4t of cumin
1 clove of garlic
1TB of butter
2 chili poblano peppers
1 fresh jalapeno pepper
1 can 15oz tomatoes, drained
1t chili powder
1 can of green chilis, chopped
1/4 cup of chicken stock
3/4 pound Velveeta cheese, cubed
1/2 cup sour cream
Fried tortilla strips or chips

Pre-heat oven to 350 degrees. Drizzle olive oil over chicken with salt and pepper. Cook for 35 mins. Allow to cool and de-bone, de-skin and shred. Set aside. In butter saute chopped onions, chopped garlic clove, poblano pepper, jalapeno pepper. After onions are translucent add tomoatoes, chili powder, cumin, green chilis, stock and Velveeta cheese, and chicken. Simmer, stirring constantly. When heated through..set to the side until ready to serve. Before serving, if needed, re-heat and then turn off heat and stir in 1/2 cup of sour cream. Serve over tortilla strips or tortilla chips. Also good served over rice (for extra kick...add in some cilantro to the rice before serving). This dish is great for a crowd and can be doubled/tripled.
