Cream of Tomato Soup

Note: This soup is really similar to Campbell's Tomato Soup, if you add milk (rather than water) to the soup mix. Don't expect anything gourmet. It's really creamy and not too tomato tasting (so kids love it) and it pairs perfectly with a crunchy, greasy grilled cheese sandwich!

5 tablespoons butter
1/2 cup chopped onion
4 tbsp flour
4 cups milk
1 1/2 tsp sugar
1 1/2 tsp salt
1/2 tsp baking soda
1 28oz can whole peeled tomatoes, roughly chopped

Melt the butter in a medium saucepan over medium heat. Add the onion and cook, stirring, until the onion is softened, about 5 minutes. Stir in flour and cook another minute. Slowly stir in milk, sugar, and salt and continue to cook until slightly thickened, about 10 minutes. Stir the baking soda into the tomatoes. Add the tomatoes to the milk, and bring to a simmer. Remove from the heat, pour soup into a large bowl and use a hand blender to puree soup. If necessary, run soup through a fine sieve to remove all clumps. Pour soup back into the saucepan, heat and serve.
