Kevin's Famous Dog Burgers (Hamburgers)

Recipe Details:

Ingredients
1 1/4 lbs. ground beef (ideally, fresh ground chuck with about 15% fat; leaner will dry out)
1 packet Lipton’s Onion Soup mix
2 tbsp. unsalted butter
1 or 2 generous “glugs” of bourbon (such as Jack Daniel’s)
1/4 cup beer, plus more for drinking while you grill
Freshly ground pepper

Toppings
Swiss, Gruyere or blue cheese (enough to top 4 burgers)
4 large hamburger buns
1 red onion, thinly sliced and lightly sauteed
1 tomato, sliced
Kosher sandwich-sliced pickles
Dijon mustard

Preheat a grill (or you can use a cast iron skillet if you’re stuck in a city apartment). In a small sauce pan, mix onion soup mix, bourbon and beer, and simmer until reduced to a slightly syrupy consistency. Remove from heat and stir in butter. Allow this mixture to cool completely. Using your hands, thoroughly mix the ground beef, onion-bourbon-beer-butter mixture and pepper. Shape the meat mixture into about 1/3 lb patties (there should be 4 total). Grill the burgers at medium heat for about 6 – 8 minutes per side. If you want even juicier burgers, pour a splash of beer over the patties as they cook. Place the cheese slices on the burgers a few minutes before they’re done. Be careful not to overcook them. Toast the buns on the grill or in the oven. Serve while they’re hot and juicy.

Note: Perfect for a summer bbq. We sometimes substitute turkey meat for the ground beef.
