Gourmet French Toast
3 large eggs
1/2 cup milk
1/2 tsp cinnamon
1/2 tsp vanilla extract
2 1/2 tbsp unsalted butter
4 slices of challah, brioche or stale Puglisi loaf, 3/4-inch thick
1 pint strawberries, hulled and halved
1 tbsp sugar
In a medium bowl, mix together strawberries, sugar and 1 tsp of water. Set aside. Whisk together eggs, milk, cinnamon, and vanilla in a shallow baking dish. Soak challah slices in the egg mixture for 5 minutes, turning several times. In a large skillet, melt butter over moderate heat. Add challah slices and cook until browned, about 5 minutes per side to ensure bread is cooked throughout. Transfer toasts to plates and top with strawberries. Dust with confectionersí sugar. Serves 2.
